🥩 OTHER NECESSARY INGREDIENTS:
- 1 kg of beef (brisket, oxtail or flank)
- 1 large chopped onion
- 2 chopped tomatoes
- 1 cup of chicha de jora (or beef broth)
- 1/2 cup of green peas
- 1 diced carrot
- Ground cumin
- Dried oregano
- Salt and pepper to taste
- Vegetable oil
To accompany:
- White rice
- Cooked yucca (optional)
- Creole sauce
👨🍳 STEP-BY-STEP PREPARATION:
Step 1: Prepare the beans
Soak the canary beans overnight. The next day, cook them in salted water until tender but firm. Set aside.
Step 2: Sear the meat
Cut the meat into medium-sized pieces. In a large pot, heat oil and sear the meat on all sides until browned. Remove and set aside.
Step 3: Prepare the dressing
In the same pot, sauté the chopped onion until translucent. Add 2 tablespoons of Sibarita garlic paste, 3 tablespoons of Sibarita Amarillin, cumin, oregano, salt, and pepper. Cook for 2 minutes.
Step 4: Add the cilantro
Add 4 tablespoons of La Latina cilantro paste and mix well. This is the ingredient that gives the seco its characteristic green color and unique aroma.
Step 5: Cook the meat
Return the meat to the pot, add the chopped tomatoes and the chicha de jora or beef broth. Mix well, add a pinch of Ajinomoto, cover, and cook over low heat for 1 hour.
Step 6: Add the vegetables
After 1 hour, add the peas, carrot, and a little more water if needed. Continue cooking for another 30 minutes, or until the meat is very tender.
Step 7: Add the beans
Add the cooked canary beans and mix gently. Cook for 10 more minutes to allow the flavors to meld.
Step 8: Serve hot
Serve the beef stew piping hot with white rice, boiled yucca, and salsa criolla. The traditional taste of Peru on your table!
