For the Dry :
- 1 whole chicken cut into pieces
- 3 tablespoons of pasta Coriander The Latina 225g
- 2 tablespoons of pasta Annatto The Latina 225g
- 1 teaspoon of Sibarita Garlic Doypack 250g
- 1 cup of beans Canary He Plebeian 500g cooked
- 1 large red onion, chopped
- 2 tablespoons of Ajinosillao 500ml
- 1 sachet of Ajinomoto About 100g
- 2 cups of chicken broth
- 1 cup of chicha de jora (optional)
- Salt, pepper and allino moto to taste
- Vegetable oil
For Accompany :
- White rice
- Canary beans
- boiled cassava or potato
Step-by-step preparation :
1. Marinate the chicken pieces with Ajinosillao , salt and pepper for 30 minutes .
2. In a large pot , heat oil and brown the chicken pieces on all sides . Withdraw and reserve .
3. In the same pot , sauté the onion until translucent .
4. Add Sybarite Garlic and sauté for 1 minute .
5. It incorporates Paste Annatto The Latin and mix well for 2 minutes .
6. Add 3 tablespoons of pasta Coriander The Latin and sauté for 3 more minutes .
7. Pour in the chicken broth and the chicha de jora if you are using it .
8. Return the chicken pieces to the pot and let it boil .
9. Reduce the heat , cover and cook for 25 minutes .
10. Add the cooked canary beans and season with Ajinomoto .
11. Cook for 10 more minutes until the chicken is tender and the sauce has thickened .
12. Serve hot accompanied by white rice , beans and yucca .
