Causa Peruana is an iconic dish that combines layers of mashed yellow potatoes seasoned with yellow chili pepper and filled with chicken or tuna. An explosion of flavors and colors that represents the best of our cuisine.

Prepare the authentic Peruvian Causa with the essential ingredient
The yellow chili pepper that gives it its characteristic flavor and color
🥔 OTHER NECESSARY INGREDIENTS:
For the potato dough:
- 1 kg of yellow potatoes (or white potatoes)
- Juice of 2 lemons
- Vegetable oil
- Salt to taste
For the chicken filling:
- 2 cooked and shredded chicken breasts
- 1/2 cup of mayonnaise
- 1 small onion, finely chopped
- Salt and pepper to taste
For decorating:
- Sliced hard-boiled eggs
- black olives
- Sliced tomato
- Fresh lettuce
- Avocado (optional)
👨🍳 STEP-BY-STEP PREPARATION:
Step 1: Cook the potatoes
Wash and cook the potatoes in their skins in salted water until very tender (approximately 25-30 minutes). Let them cool slightly, peel them, and mash them while still hot.
Step 2: Prepare the dough
In a large bowl, mix the mashed potatoes with 2 tablespoons of Sibarita Amarillin, the lemon juice, vegetable oil (approximately 1/4 cup), and salt to taste. Knead until you obtain a smooth, homogeneous, yellow dough.
Step 3: Prepare the chicken filling
Mix the shredded chicken with the mayonnaise, chopped onion, salt, and pepper. It should be creamy and well combined.
Step 4: Assemble the first layer
In a rectangular mold or on individual plates, spread half of the potato dough into an even layer approximately 1 cm thick.
Step 5: Add the filling
Distribute the chicken filling over the first layer of potato, spreading it evenly.
Step 6: Cover with the second layer
Cover with the remaining potato dough, smoothing the surface well with a spatula or damp hands.
Step 7: Decorate
Garnish the top with slices of hard-boiled egg, black olives, tomato, and lettuce leaves. You can add avocado for an extra touch.
Step 8: Refrigerate and serve
Refrigerate for at least 1 hour before serving to allow it to firm up. Serve chilled as an appetizer or main course.
