🥩 OTHER NECESSARY INGREDIENTS:

  • 1 kg of beef heart (or beef if you prefer)
  • 1/2 cup of red wine vinegar
  • 1 cup of chicha de jora (or dark beer)
  • Ground cumin
  • Dried oregano
  • Salt and pepper to taste
  • Skewer sticks

To accompany:

  • Boiled potatoes
  • Cooked corn
  • Chili sauce (optional)

👨🍳 STEP-BY-STEP PREPARATION:

Step 1: Prepare the heart

Clean the beef heart thoroughly, removing any veins and fat. Cut it into cubes approximately 3-4 cm in size. Wash well with water and vinegar.

Step 2: Prepare the marinade

In a large bowl, mix 3 tablespoons of aji panca paste, 2 tablespoons of Sibarita Amarillin, 2 tablespoons of Sibarita garlic paste, 1/4 cup of Ajinosillao, the vinegar, the chicha de jora, cumin, oregano, salt, pepper, and a pinch of Ajinomoto.

Step 3: Marinate the meat

Place the diced hearts in the marinade and mix well so that all the pieces are coated. Cover with plastic wrap and refrigerate for at least 4 hours (ideally overnight).

Step 4: Thread onto sticks

Remove the meat from the marinade (reserve the marinade) and thread the cubes onto the skewers, leaving a little space between each piece.

Step 5: Prepare the glaze

Take the reserved marinade and add a little vegetable oil. This will be your glaze during grilling.

Step 6: Grill

Heat the grill or barbecue well. Grill the anticuchos over medium-high heat, turning them constantly and basting them with the marinade each time you turn them.

Step 7: Cook to perfection

Cook for approximately 10-15 minutes until golden brown on the outside but juicy on the inside. Don't overcook them or they will become tough.

Step 8: Serve hot

Serve immediately with boiled potatoes, corn on the cob, and aji sauce on the side. The taste of Peruvian street food in your home!
