Papa a la Huancaína is one of the most emblematic dishes of Peruvian cuisine. This delicious appetizer combines yellow potatoes with a creamy yellow chili pepper sauce that wins everyone over.

🥔 OTHER NECESSARY INGREDIENTS:
- 1 kg of yellow potatoes (or white potatoes)
- 200g of fresh cheese
- 1 can of evaporated milk (400ml)
- 6 soda crackers
- Vegetable oil
- Salt to taste
- Hard-boiled eggs for decoration
- black olives
- Fresh lettuce
👨🍳 STEP-BY-STEP PREPARATION:
Step 1: Cook the potatoes
Wash and cook the potatoes in their skins in salted water until tender (approximately 20-25 minutes). Let cool, peel, and slice.
Step 2: Prepare the Huancaína sauce
In a blender, place the fresh cheese, evaporated milk, soda crackers, 2 tablespoons of Sibarita yellow chili pepper, 1 tablespoon of Sibarita garlic paste, and a pinch of Ajinomoto.
Step 3: Blend the sauce
Blend all ingredients while slowly adding vegetable oil until you achieve a smooth, creamy consistency. Taste and adjust the salt.
Step 4: Adjust the spiciness
If you want it spicier, add more Sibarita yellow chili pepper. If it's too thick, add a little more evaporated milk.
Step 5: Prepare the presentation
On a plate, place fresh lettuce leaves as a base. Arrange the potato slices on top of the lettuce.
Step 6: Coat with the sauce
Pour the huancaína sauce generously over the potatoes, covering them completely.
Step 7: Decorate
Garnish with slices of hard-boiled egg and black olives on top.
Step 8: Serve
It works perfectly as an appetizer or side dish. A classic that never fails!
