Champú is a traditional Peruvian hot drink made with fruit, panela (unrefined cane sugar), and aromatic spices. It's perfect for cold days and special celebrations like Fiestas Patrias (National Holidays).

🍎 OTHER NECESSARY INGREDIENTS:
- 1 liter of water
- 2 chopped apples
- 2 chopped quinces (if you have them; otherwise, just apples)
- ½ cup chopped pineapple
- 1 cinnamon stick
- 2 cloves
- 1 tablespoon of sweet potato flour or cornstarch
- 1 teaspoon of soursop or vanilla essence (optional)
👨🍳 STEP-BY-STEP PREPARATION:
Step 1: Prepare the syrup
Boil the water with the panela, cinnamon and cloves until completely dissolved.
Step 2: Add the fruit
Add all the chopped fruit and cook for 15 minutes over medium heat until soft.
Step 3: Prepare the thickener
Dissolve the sweet potato flour or cornstarch in a little cold water.
Step 4: Thicken the drink
Add it to the pot to thicken the drink. Stir constantly.
Step 5: Cook
Cook for 3 more minutes, stirring constantly, then turn off the heat.
Step 6: Aromatize
Add soursop or vanilla essence at the end if desired.
Step 7: Serve
Serve warm in large cups with fruit. It's best enjoyed warm, perfect for winter!
💡 CHEF'S SECRETS:
- 🍯 Use El Dorado Powdered Panela for faster dissolving
- 🍎 You can use whatever fruit you have available (peaches, pears, etc.)
- 🍠 If you don't have sweet potato flour, you can use cornstarch without any problem.
